Our Brand is Irish. On a small farm in Ireland 1992, Mr. James Quinn unintentionally created delicious fried chicken in the comfort of his own home. It was crisp, greaseless, perfectly seasoned and tasted delicious.
Soon after, James had so many requests from family and friends for his secret recipe that he was unable to keep up with demand.
Equipped with the secret recipe, James embarked upon a life changing journey across the United States of America that enabled him to perfect and refine his recipe by incorporating local herbs and spices from places such as Texas, Alabama and Kentucky.
James eventually rose to management level at several fried chicken chains and would later become a consultant to multinational franchisors.
The Irishman was determined to create “the best damned authentic Southern Fried Chicken I have ever eaten,” so traveled the American South, gleaning insight from down-home cooks and professional chefs, sourcing a variety of herbs and spices unique to Texas, Alabama and Kentucky, all the time refining new techniques, procedures, systems and his recipe until he considered it “the best fried chicken in the world.”
That marked the birth of ST Happy Chicken and the subsequent launch of a fried chicken franchise like no other.
