When the Spanish arrived in Mexico in the 16th century, they brought with them the art of distillation. They began distilling pulque to create a new spirit, which they called mezcal. Tequila is a specific type of mezcal that is made from the blue agave plant and produced in specific regions of Mexico, primarily the state of Jalisco.

Tequila is made from the blue agave plant, which takes around 7 to 10 years to mature. Once the plant is ready, it is harvested and the leaves are removed, leaving only the core or "piña". The piñas are then cooked in an oven, which caramelizes the natural sugars and gives tequila its distinct flavor.

After cooking, the piñas are crushed to extract the juice, which is then fermented with yeast to create alcohol. The resulting liquid, or "mosto", is then distilled twice to create tequila. The first distillation creates "ordinario", which is then distilled again to produce tequila.

3. Añejo: Añejo tequila is aged for a minimum of one year but less than three years in oak barrels. It has a darker color and a more complex flavor profile.

4. Extra Añejo: This is the newest category of tequila, and it's aged for a minimum of three years in oak barrels. Extra añejo tequila has a dark color and a rich, complex flavor, with notes of caramel and vanilla.
