In August 1990, Baja Fresh® Mexican Grill opened its first restaurant featuring all-fresh, traditional fire-grilled Mexican favorites. Like many who grew up on fast food, we realized that it was time for something else, something different and something FRESH. Success was instant as customers realized they didn't have to settle for processed and pre-heated food or lots of fillers instead of flavors.

We're picky in how we prepare our food. We buy the best tomatoes, onions, peppers, and spices, making our numerous fresh salsas every day. We crush only the finest, ripest avocados for our guacamole in small batches all day long to ensure freshness. All this freshly prepared food takes a lot of extra effort, but our customers really eat it up.
The one thing that distinguishes Baja Fresh® from everyone else is our commitment to freshness. At each of our locations your food is made to order and prepared FRESH. It's the only way to serve food and that's why it's the only way we do it!
Baja Fresh restaurants also feature an “all-you-can-eat” self-service salsa bar. Our salsa bars are stocked with a variety of fresh salsa from mild to spicy, including Baja Fresh’s signature fire-roasted Salsa Baja™. Baja Fresh uses No Microwaves, No Can Openers, No Freezers, No Lard, and No M.S.G. ® in the preparation of its fresh offerings.
